Résumé: This study focuses on the extraction and physicochemical analysis of the seeds oil of a pomegranate variety (Punica granatum L.), of Tlemcen (West Algeria). The extraction of pomegranate seeds oil was carried out with the methods: Soxhlet, ultrasound and microwave using three solvents (petroleum ether, cyclohexene and isopropanol) also with a mechanical press. The oil yields obtained are between 8 and 20,2% depending on the technique used. The analysis of the different parameters: acidity index, peroxide value ¸ refractive-index and viscosity has shown that the oil obtained is a good quality by comparing with other vegetable oils. The unsaponifiable content of the oil is very high; it varies between 4, 2 and 5 %, which shows the nutritional value of this oil. An analysis by gas chromatography (GC) was conducted in order to determine qualitatively the fatty acids composition of oils obtained. The chromatograms of different oils showed the same profiles
