Abstract
Roasted date pits are considered an excellent source of antioxidants, which can contribute to the
treatment of many diseases. The aim of the study was to examine the antioxidant activities and determine
the phenolic profile of Deglet-Nour roasted date pit extracts. Significant variations were observed in the
total phenol content, which amounted to 1.318±0.0008 mg EAG/g dry extract, as well as in the total
amount of flavonoids, measured at 77.14±11.7 mg EQ/g extract. DPPH free radical scavenging activity
and FRAP iron reduction capacity were also assessed, with remarkable results of 0.82 mg/ml and 6.36
mg/g respectively. These results highlight the potential of roasted date pits as a food alternative and
natural resource, thanks to the presence of several important compounds with phenolic properties and
high antioxidant capacity. In conclusion, the analyses carried out support the idea that the consumption
of roasted date stone powder is recommended and encouraged due to its many health benefits.
