Abstract

Résumé : Afin d’assurer la sécurité et la qualité de sa production, l’unité REMCHAVI (Tlemcen) souhaite appliquer le système HACCP. La mise en œuvre du système s'effectue en plusieurs étapes successives. Dans un premier temps, il s’agit d'appliquer des programmes préalables pour réunir les conditions générales d’hygiène permettant l’application cohérente du système HACCP. Cette étude est une évaluation de l’état des lieux en matière de bonnes pratiques d’hygiène au sein du couvoir de la société REMCHAVI sise à Remich (Tlemcen). Pour ce faire, un questionnaire basé sur les exigences de la norme spécification technique ISO-TS 22002-1 a été utilisé. Le mémoire comprend deux parties : Une partie bibliographique comprenant un rappel sur la matière première (l’œuf), le système HACCP et les programmes préalables. Une partie expérimentale dans laquelle est présentée l’entreprise, lieu de notre travail, la méthodologie d’utilisation de la check-list ainsi que le système de cotation des différentes exigences et la présentation et l’interprétation des écarts constatés. Enfin des recommandations, à court, moyen et long termes sont proposées afin que l’entreprise puisse mettre à niveaux les programmes préalables indispensables pour une application efficace du système HACCP. Abstract In order to ensure the safety and the quality of its production, the REMCHAVI hatchery unit (Remchi, Tlemcen) wishes to apply the HACCP system. The implementation of the system is carried out in several successive stages. First, it is to apply pre-requisite programs to meet the general conditions of hygiene for the consistent application of the HACCP system. This study is an evaluation of the state of the art in terms of good hygiene practices in the hatchery of the REMCHAVI company located in Remchi (Tlemcen) To do this, a questionnaire based on the requirements of the standard technical specification ISO-TS 22002-1 was used. The thesis consists of two parts: A bibliographical part including a reminder on the raw material (egg), the HACCP system and the pre-requisite programs. An experimental part in which is presented the company, place of our work, the methodology of use of the checklist as well as the system of quotation of the various requirements and the presentation and the interpretation of the noted variations. Finally, recommendations, in the short, medium and long term, are proposed so that the company can upgrade the necessary pre-requiste programs for an effective application of the HACCP system.
