dc.description.abstractLe blé est l'un des plus important produits alimentaires, il est l'aliment de base de la majorité des peuples du monde car il contient de nombreux éléments nutritionnels (protéines Carbohydrates, les vitamines. . . etc....). La farine a été fabriqué à partir du blé tendre au niveau de l'unité (Minoterie LA TAFNA) et cela après quelques analyses qui nous permettent de contrôler la qualité de blé à utiliser. Les analyses physico-chimiques et technologiques de la farine obtenue à partir du blé tendre sont globalement conforme aux normes en Algérie. 13 1I (» ..........
