The aim of the study was to examine the antioxidant activities and determine the phenolic profile of Deglet-Nour roasted date pit extracts. Significant variations were observed in the total phenol content, which amounted to 1.318±0.0008 mg EAG/g dry extract, as well as in the total amount of flavonoids, measured at 77.14±11.7 mg EQ/g extract. DPPH free radical scavenging activity and FRAP iron reduction capacity were also assessed, with remarkable results of 0.82 mg/ml and 6.36 mg/g respectively. These results highlight the potential of roasted date pits as a food alternative and natural resource, thanks to the presence of several important compounds with phenolic properties and high antioxidant capacity.
